Presidential Salmon

Ingredients
- 2 cups carrots
- 1 teaspoon oil
- 1 teaspoon brown sugar (packed)
- 1 cube ice
Instructions
We start by preheating our toaster oven to <temp val="400"/>. We take 2 large pieces of aluminum foil, about 12 inch squares, and put down on our counter. On one of the squares, we put the carrots, oil, and brown sugar, and mix with clean hands. We top with the ice cube and cover with the other piece of foil. Carefully, we fold up the edges to make a sealed package. We want it small enough to fit in the toaster oven.
The foil package is placed in the toaster oven and we bake for 40 minutes. The carrots should be tender. We open the foil package, being careful to avoid the steam, and serve the carrots in a bowl.
In addition to enjoying our company and a fine meal, Erin also visits in order to observe our son once more for her masters class. They play with play-doh and make letters. Once school work is complete, they play a rousing game of Trouble.
We make salmon for Erin because we know that she will eat it. We always make every effort to accommodate our guests' tastes, especially where they overlap with our own!
The mashed potatoes catch Chris by surprise. He was just not expecting the wasabi in there. In other words, the mashed potatoes have an unexpected flavor. And, they go well with the dinner theme.
Our daughter was a big help preparing tonight's dinner. She did much of the work with the potatoes by putting them through the food mill, which she did until her arms got tired. The carrots were mostly her doing. We had hoped that her involvement would spur her to eat them as well, but it was not meant to be. No matter, the rest of us liked them.
We also serve some of our daughter's brownie cookies. We know full well that Erin does not like chocolate cookies (she's funny that way), so we are skirting our guest rule. At the same time Erin does like brownies, so we were hopeful that she might find these tasty. Happily, she does.
