Fried Mozzarella

This is a quick first course or side dish to an italian-inspired meal. The crispy coating is wonderfully contrasted to the warm gooey cheese. A simple salad is a great accompaniment.

We start by slicing the ball of mozzarella into 8 thin slices with our serrated knife. Next, we use “standard breading procedure” to coat. We get three bowls ready for the breading. In one bowl we put the flour and some salt and pepper. In another bowl we mix the egg with the water. In a third bowl we mix the bread crumbs with the basil, oregano, salt and pepper.

We gently pat each mozzarella slice with flour, dip in the egg wash, and then coat with bread crumbs. We place the breaded slices on a wax-paper lined dinner plate as we continue with the rest of the mozzarella.

We pre-heat the oven to 275 degrees. In a non-stick pan, we heat 1.5 tablespoons or so of olive oil over medium heat. When hot, we add half of the slices and pan-fry for about a minute. We peek under to see whether the bottom is brown enough, and then turn the slices over with a spatula when they are nicely browned. We cook for another minute. We want both sides brown and crispy and the cheese heated, but not cooked too long or it will melt in the pan! Then we drain on paper towels. After a minute we put these on an aluminum-foil coated cookie sheet in the oven for a couple of minutes to keep warm. We add a little more olive oil, about a tablespoon, to the pan and continue with the rest of the slices of mozzarella. We serve them hot!
