Ingredients
- 1 medium squash
- .5 tablespoon butter
- 2 teaspoons mustard
- 2 tablespoons honey
- salt & pepper
Instructions
We preheat the oven to <temp val="425"/>.
We rinse and pat dry the squash. Carefully, we halve crosswise, and then place flesh-side down on a parchment lined cookie sheet.
We cook for 30 minutes and, with tongs, remove from the oven to our cutting board. We scoop out and discard the seeds. We remove the stem on one of the halves so that both pieces are level. We divide the glaze ingredients in the two halves and sprinkle with salt and pepper. We continue to cook for another 30 minutes until tender.
We serve the squash halves whole, filled with the yummy glaze.
Every time that we make fish `n' chips, we wonder why we don't do it more often. The prep is moderately complex if you've never done it before, but, once you get the hang of it, it's rather easy. We're definitely at that point and tonight's dinner was as easy as it was delicious.
Of course, it's not the healthiest meal, but having "unhealthy" food in moderation never hurt anyone. Besides, by cooking it ourselves, it's significantly healthier than it would be in a restaurant.
