The Incredibles Fish Sticks

- 4 ounces beet (rinsed)
- 1.5 cups spicy greens (<howto label="salad"/>, roughly chopped)
- 1 tablespoon cheese (crumbled)
- .5 tablespoon vinegar
- .5 tablespoon oil
- salt & pepper
Instructions
We start by trimming the beet a little so it will be less likely to burn in the microwave. We cut some of the long root but leave the stem end intact. We prick it with a fork in several places. We add about 2 tablespoons of water to a bowl and place the beet in wrapped in a paper towel. We microwave for a couple of minutes at a time until tender. This method of cooking is <a month="11" day="12">still</a> problematic for us, it does get a little "smoky" tasting in the microwave. Next time, we will either boil or roast the beet.
When the beet is cooked, we peel and chop. In a large bowl, we place the salad greens and beets. We top with the blue cheese. In a small ramekin we stir the vinegar, oil, salt and pepper together and pour on the salad and serve.
Most of us went to watch The Incredibles this afternoon. Our son and Chris saw it last weekend, but our daughter was sick. This time around Grammy accompanied us as well. We all thoroughly enjoyed the show.
Since we filled up on junk at the movie, a small meal was a good idea. The planned meal was not exactly a seven course meal, so it seemed perfect. Besides, we had one less beet than we had originally planned. Even so, we still had too much food—mostly on account of making the entire box of fish sticks.
We did try to microwave another beet tonight. Yet again our scientific natures cause us to live life on the edge. Since we had another fire with tonight's attempt, we may be done microwaving beets for a while.
