Cheese Quesadillas

The ingredients list doesn't get much shorter than this and the preparation is easy. This make a wonderful addition to any mexican dish. Originally served as part of Cheese Quesadillas and Leftover Black Bean Soup.

Ingredients

  • 4 fajita-size flour tortillas
  • 2 ounces monterey jack with jalapeno peppers cheese (grated)
  • 3 tablespoons divided vegetable oil
  • for garnish sour cream
  • for garnish parsley

Instructions

We preheat the oven to 275 degrees. We heat a pan with half the oil over medium heat. We place half of the cheese on one tortilla and cover with another tortilla. We place in the heated pan and cook for a few minutes until browned on one side. Then we flip and continue cooking until cheese is melted and both sides are crispy. When done, we keep it warm in the oven on a cookie sheet while we repeat for the remaining quesadilla.
