Cheese Quesadillas and Leftover Black Bean Soup

Ingredients
- 4 fajita-size tortillas
- 2 ounces cheese (grated)
- 3 tablespoons vegetable oil
- sour cream
- parsley
Instructions
We preheat the oven to 275 degrees. We heat a pan with half the oil over medium heat. We place half of the cheese on one tortilla and cover with another tortilla. We place in the heated pan and cook for a few minutes until browned on one side. Then we flip and continue cooking until cheese is melted and both sides are crispy. When done, we keep it warm in the oven on a cookie sheet while we repeat for the remaining quesadilla.

- 2 tablespoons corn
- 1 tablespoon cream cheese
- 1/2 lime
- reduced fat sour cream and cilantro
Instructions
We put the leftover soup into a pot. We bring the soup to a boil, add the corn, and simmer gently for a few minutes. We want the soup to be hot. We add the cream cheese and keep warm. We don't want it to boil with the added cream cheese. When we are ready to serve, we add the juice from the lime half. We garnish each bowl with sour cream and cilantro.
