Spicy Turkey Burgers

Inspired by a Martha show featuring turkey burgers stuffed with cheese, we make cheese(turkey)burgers. The lean ground meat is flavored with spicy mustard and chile powder and kept moist with mango chutney and sour cream. Additional chutney is served on the buns in lieu of ketchup for a “gourmet” taste.

An hour and a half before we want to eat, we start by putting the turkey, bread crumbs and sour cream in a bowl. In a cup, we combine the mango chutney with the sage leaves and use kitchen scissors to chop them fine. This is also added to the bowl with the mustard, chile powder and salt. Wearing clean disposable gloves, we mix the ingredients well.

We make four burgers and set them aside on a clean plate. Then we wash our hands and the prep area well. The burgers are covered loosely with plastic wrap and refrigerated for an hour to help them hold their shape.

When it is almost time for dinner, we add the oil to our large non-stick pan, and begin heating it over medium heat. When hot, we add the turkey burgers and cook for 5 minutes a side. There is some liquid in the pan which we wipe out with paper towels and then flip the burgers again. We top each with a slice of cheese, lower the heat to medium-low, and cover loosely with foil.

The cheese burgers continue to cook for 5 minutes. Since the burgers are made with ground turkey, we want them well-cooked in the center. When done, we remove them to a clean plate.

The cheese burgers are served on hamburger buns topped with cilantro leaves and additional mango chutney.
