Leftover Chili and Salad

We take last night’s dinner, dress it up a little, and have ourselves a nice little meal. Chili, ever the perfect medium for leftovers, gets wrapped in corn tortillas, crisped in the oven and served with salsa. We call them enchiladas and eat well—even by our standards.
This meal was a little too spicy for the kids. Our son ate some plain beans, grated cheddar cheese and chips. Elora had the waffle that “Mommy had when she was ”/meals/2004/02/29">getting ready for Greta to be born". Many folks have asked how we manage to get the kids to eat the dishes in our cookbook. The answer is that we don’t—not always. We expose the kids to as much a variety of foodstuff as possible, we encourage them to be open to new experiences, but it does not always work. No matter—as long as they try something new and eat healthy, we’re happy.
