Blue Cheese Sauce

Prior to making or purchasing buffalo-style chicken, we prepare this simple sauce. We always use reduced fat sour cream and mayonnaise since that’s what we keep in our fridge, but the full-fat can be substituted. Of course, any blue cheese can be substituted for the Danish blue.

In a ramekin, we combine the sour cream and mayo. We add the blue cheese and a little pepper and stir it in well with a fork. We cover and refrigerate until it is time to eat.
