Ingredients
- 1 bunch beet greens
- 3 cloves garlic (peeled)
- salt
- .5 tablespoon oil
- red pepper flakes
Instructions
We wash our greens in the salad spinner <howto label="salad"/>, discarding the tough stems, and cleaning the sandy greens several times. We chop them coarsely on the cutting board and mince the garlic cloves with a pinch of salt.
We put the garlic and oil in a large pan and wait for it to get hot over medium heat. We add the greens and toss with tongs until they wilt. We serve sprinkled with red pepper flakes.

It was a typical Sunday for us. We started off at the farmers' market, then had a nice little visit with Grammy and Boppy.
When we returned home, we played outside for a bit, which went rather badly. While showing off for Mr. Barry, our son took quite a spill, chipping his tooth. He spent the next hour or so on the sofa watching Scooby Doo and the Cyber Chase, which we recorded on our MythTV setup.
While her brother recuperated, our daughter watched football and played games with Chris. Then she set off to help with dinner.
Robin did supervise closely, but our daughter really seems to be taking to this cooking thing. Of the dinner, Robin was most pleased with being able to serve beet greens. They tasted similar to swiss chard, but Robin mostly got a cheap thrill out of using the farmers' market beets twice.
Pasta with sauce is always a family staple on Sundays. We chose mafalde primarily because that is what we had in the pantry. We opted for the simple sauce because we are lazy and because our daughter would be able to make it almost entirely on her own. We purchased fresh italian bread at the farmers' market this morning with this meal in mind. And since this was a meal prepared by our daughter, we naturally had some of her famous oil to go with it.
Dinner was fantastic. Now if only we could get her to do this on a regular basis.
